This delightful recipe combines al dente spaghetti with succulent shrimp in a velvety cream cheese sauce, perfect for a cozy evening.

  • 400 g Spaghetti
  • 300 g Shrimp (peeled and deveined)
  • 200 g Cream Cheese (plain or with herbs)
  • 2 cloves Garlic (finely chopped)
  • 1 small Onion (finely diced)
  • 150 ml Vegetable broth
  • 100 ml Cream (optional for extra creaminess)
  • 2 tbsp Olive oil
  • 0.5 Lemon Juice
  • Salt and Pepper (to taste)
  • Fresh Dill, Parsley or Basil (for garnish)
  • Chili flakes (optional for some heat)

Instructions

  1. Cook the spaghetti and reserve pasta water: Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente. Reserve about 100 ml of the pasta water before draining the spaghetti.
  2. Sauté aromatics: In a large pan, heat olive oil over medium heat. Add the diced onion and sauté for about 2-3 minutes until translucent. Add the chopped garlic and sauté for another 30-60 seconds until fragrant.
  3. Sauté shrimp and set aside: Add the shrimp to the pan and cook for about 1-1.5 minutes on each side until they turn pink and curl slightly. Drizzle with lemon juice and remove from the pan.
  4. Prepare the cream cheese sauce: In the same pan, add the cream cheese, vegetable broth, and optional cream. Stir until smooth and let it simmer until slightly thickened. Season with salt, pepper, and chili flakes if desired.
  5. Combine spaghetti and shrimp with the sauce: Add the drained spaghetti and shrimp back into the pan with the sauce. Mix well to coat everything evenly. If the sauce is too thick, add reserved pasta water as needed.
  6. Serve immediately: Heat everything gently until warm. Plate the spaghetti with shrimp and garnish with fresh herbs. Enjoy directly from the pan!
